At Paloma Taqueria in Wānaka, our mission is simple: to create the best tacos using fresh New Zealand ingredients. We start by sourcing whole corn kernels from a farmer named Pattie in Napier, and through the traditional process of nixtamalization, we craft our masa dough. This is then fed through Tony the Taco Press to create our fresh corn tortillas.
At the heart of Paloma Restaurant is the wood fire grill, where we lovingly grill local ingredients before nestling them into your taco. Pair your taco with Mexico’s favourite cocktail, the Paloma, for the perfect dining experience.
